Marti's Musings: Family Dessert Favorite - Cookie Bars

This recipe has been a  family favorite for over 25 years.  Whenever our kids come home for a visit, they ask for these cookie bars.  We often bring these delicious cookie bars to share at RV pot lucks and get togethers.  Here is a recipe for you to enjoy, quick and easy to make, but be warned, they are addictive!

Here is what you need:  Cornflakes, any brand, (note:  this was originally a "Special K" recipe, but corn flakes are cheaper!) Light Karo syrup, margarine, sugar,  peanut butter, semi-sweet chocolate chips, butterscotch chips and a 9" X 13" baking pan. 


Put two tablespoons of margarine into a pan and heat until melted.


Mix in 1 cup sugar.


Add 1 cup Karo syrup and mix it all together.


Put 6 oz butterscotch and 6 oz semisweet chips (about 1/2 bag each) into a bowl.


Heat in microwave for about 2 minutes. Note: Chips will retain their shape until stirred. Put aside until later.


Add 1 and 1/2 cups peanut butter to mix once it begins to boil.


Stir mixture until smooth.


Spray the baking pan with a non-stick spray like Pam.


Add 6 cups of cornflakes to mixture.


Stir until all the flakes are coated.


Pour the mixture into the baking pan.


Take a large spoon and coat the back with margarine.


Then use the coated spoon to smooth out the cornflake mixture.  The margarine keeps the flakes from sticking to the spoon as you smooth them out.


Spread the mixture evenly in the pan.


Now stir the heated chips until smooth.


Then spread the melted chips over the top of the cornflakes.




Now this is a very important step, cut the mixture into squares while everything is still warm.


After cutting, let stand a room temperature to cool, usually a hour and they'll be ready to eat.


Then pop out a cookie bar square and enjoy!



We have no idea how many calories are in each cookie bar.  We used lite Karo syrup, margarine and low fat peanut butter to make ourselves feel better.  We estimate that each cookie bar will add about five pounds to your hips...on each side.  But they are soooo good!

PS:  They disappear fast so you might want to hide some for yourself! ;c)
